Nintendo explained why they updated Animal Crossing.

Takahashi: We are constantly considering the balance between the development of brand new Nintendo Switch 2 titles and new entries in existing series, and updates to existing Nintendo Switch software.

It appears that we can expect more NS1 game updates coming, but spread out. Not counting BotW, Nintendo published 12 Wii U-to-Switch ports between 2017 and 2025, ranging from heavyweights (e.g., MK8) to niche titles (e.g., Tokyo Mirage Sessions). I suspect that the NS1-to-NS2 game upgrades are managed similarly.
